My job seems to be very bipolar lately. One night I have the craziest patients ever, call lights are going off left and right, and we get swamped with new admissions. The next night you can hear a pin drop in the rooms and I’m just begging for someone to need me at 2am when my eyes just can’t take it anymore.
Last night was the later of the two. It was so S-L-O-W! Thank God for Netflix on my phone and ABC.com for free episodes. I caught up on all my favorite TV shows while fitting in a few runs throughout the stairwell… got to get some exercise in. 7:30 am couldn’t come quicker!
After sleeping the day away, I woke up to one thought… Breakfast!
Lately my desire to cook has been suppressed due to the mortuary of gnats in our kitchen. But since the little guys surrendered, I figured it was a perfect time to experiment in the kitchen.
Greek Yogurt Pancakes anyone?
After playing around with a few ingredients, I found a perfect combination that of Greek Yogurt and Berry Medley for a loaded protein pancake.
I present to you, Berry Fulfilling Greek Yogurt Pancakes!
Berry Fulfilling Greek Yogurt Pancake Recipe
Ingredients:
3/4-cup 0% Fage Greek Yogurt
1/2-cup Egg Substitute
1/2-cup Whole-Wheat Flour
1/2-cup Berry Medley (Raspberry, Blueberry, Blackberries)
1/2-tsp Baking Soda
1/2-tsp Almond Extract
1/2-tsp Vanilla Extract
Dash of Stevia Sweetener
Dash of Salt
Directions:
1.) Mix Greek Yogurt, Egg Substitute, Almond Extract, & Vanilla Extract into a small bowel
2.) In a separate bowl combine Flour, Baking Soda, Stevia, & Salt
3.) Combine and whisk till evenly mixed
4.) Fold in Berry Medley
5.) Place 1/4-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip
6.) Top with Extra Berries & Almonds with Sugar Free Maple Syrup
Question: What is your favorite Pancake Mix-Ins?
Although I love berries, I would say my all time favorite is bananas and cinnamon

Love berries with pancakes and I imagine the greek yogurt adds a great touch! That would be so hard for me – going from a hectic day to a low-key one and never really knowing what to expect. You make it work though!
