For the past two and a half years my nose has been planted in nursing books, consumed with medical terminology and diagnoses. I just couldn’t wait for the day graduation to hit so that I could find myself absorbed in Barnes & Noble’s leisure reads rather than upstairs in their coffee shop studying my life away.
Once graduation hit I found myself in rebellion against any read. The thought of picking up any book was out of the question. It took about 4 months for me to even consider the thought of touching a book.
I have been a huge fan and blog follower of Carrots ‘N’ Cake since I started blogging a few years ago. Her healthy living philosophy was right up my alley and not to mention I became obsessed with Murphy, her dog. Since I myself am not allowed to have dogs where I live, I figured I could live vicariously through her ? Such a cute dog!
I didn’t have to think twice with the idea of reading again when I found her book on the featured bookshelf of Barnes & Noble. It was date night and one of our favorite spots to relax at is Barnes & Noble. I quickly grabbed the book, found myself a spot in the coffee shop corner and was engulfed in the book. I eventually found myself working out longer than excepted because I was wrapped up in book.
Carrots ‘N’ Cake: Healthy Living One Carrot and Cupcake at a Time is a simple to read book with great insight on how to balance eating and exercising without over doing it. Tina Haupert’s shares her life experiences of what works for her in terms of staying committed to healthy living. Her health tips goes far beyond the day-to-day routine while sharing tips on how to eat and drink in moderation during happy hours, date nights, and traveling. She also shares with us her exercise routine and how to implement strength training into the gym routine… one thing I always struggle with as a cardio lover.
The one thing I love about Tina Haupert’s book is that she allows herself the luxury of having the dieters coined “forbidden foods” all while finding that balance of proportion sizing, exercising, and moderation. Within the book you can find over 50 recipes dispersed within it, including her Cookie Friday recipes.
I decided to try out one of her recipes and opted for the 3-minute Oatmeal Raisin Cookie… what more could I ask for than instant gratification in less than 3 minutes?
3-Minute Oatmeal Raisin Cookie Recipe
Ingredients:
1/4-cup oats
1/8-cup liquid egg whites
2 teaspoons brown sugar
2 teaspoons all-purpose flour
1/4-teaspoon vanilla extract
1/4-teaspoon baking powder
1-tablespoon raisins
Cinnamon to Taste
Directions:
Mix together all ingredients into a microwavable bowl and cook for 45 seconds on high
Good think this recipe results in one big cookie or else I could have made some big damage on the diet side of things.
All in all, I absolutely loved reading Tina Haupert’s life stories in Carrots ‘N’ Cake: Healthy Living One Carrot and Cupcake at a Time. With two thumbs up I would highly recommend this for your next read.
