Blueberries aren’t just beautiful to look at, they are beautifully loaded with Vitamin C and Fiber to aid in the immune system, increase regularity, lower cholesterol, and promote iron absorption.

Throw in a little bit of bread into the mix and you have a mouth-watering blueberry muffin that is perfect for any time of the day… Breakfast or Dessert- You Choose.

Unfortunately for most bakeries and store shelves, what could be healthy blueberry muffins have been turned into sugar booms, loaded with unnecessary butter, sugar, and calories. Unfortunately all that goes straight to the hips and thighs.

For example, Starbucks’ Low-Fat Blueberry Muffin contains a whooping 450 calories, 2.5g fat, and 57g of Sugar. Don’t let the Low-Fat label deceive you! Just because blueberry muffins are low fat doesn’t mean that they are completely healthy. These muffins contain almost enough calories for a complete meal.

Have no fear, the Skinny Blueberry Muffin is here. Don’t waste all your calories and money on a store bought blueberry muffin. Not only are the Skinny Blueberry Muffins low in calorie, but they are also low in sugar and fat! A perfect recipe, no one will even know they are healthy!

Brownie in a Mug

Brownies are the ultimate dessert when craving chocolate. A perfect square of chocolaty goodness can always hit the spot of a sweet tooth. Between rich fudge consistency or moist cake consistency, the joy of brownies is that they can be transformed into your own preference.

However, the one downfall with any brownie recipe is that they are so good that temptation is always lurking in the kitchen after baking an entire batch. Pretty soon you realize that you ate the entire pan… which is why I have created the Brownie Mug. A low calorie brownie that meets both consistencies of a rich fudge and moist cake that comes in a single serving. Temptation free and low calorie- the Brownie Mug is perfect for anyone that is looking to cut out a few extra calories without cutting out dessert entirely.

Low Calorie Brownie Mug Recipe

Ingredients:

1 Tbsp Flour
1 Tbsp Unsweetened Cocoa
3/4 Tbsp Splenda Brown Sugar
2 Tbsp Unsweetened Applesauce
1/8 Tsp Vanilla Extract
1 Pinch Salt
1 Pinch Baking Soda
6 Dark Chocolate Morsels

Directions:

1.) Combine all ingredients into a microwavable safe mug- except the dark chocolate morsels.
2.) Mix thoroughly
3.) Sprinkle dark chocolate morsels evenly on top of brownie mix
4.) Microwave for approximately 1min (each microwave will vary)
5.) ENJOY!

The Brownie Mug is a perfect snack or dessert to whip up if you are craving something chocolaty and just can’t wait for the time it takes to make a full pan of brownies… and it won’t even put a dent on your waistline unlike most brownie recipes!

My life is surrounded by college students. As some of you of may know, my husband is a resident director for a university, requiring us to live on campus. . . in a dorm… 600+ students to be exact. Some may say that it sounds miserable, while I must say that I wouldn’t change it for the world.

The way to college student’s heart is through their stomach. With living on a college campus comes the bottomless pit college students. My love for baking comes hand in hand with this one. I tend to spoil our students with my kitchen late at night with baking. Ironically I must say that most of these recipes aren’t as healthy as I would like them to be. But I guess college boys aren’t really looking for fat-free cookies.

One of my signature recipes is a pumpkin spice muffin recipe. This recipe became a hit last year when I started baking in the dorms and opening up my door for those who walked by. It’s has become a recipe that students request on a near by weekly basis. I now have just learned to keep a stash of pumpkin puree and extra baked pumpkin spice muffins in the kitchen at all times… to also bake my protein powder pumpkin muffins. While this recipe first started out with sticked of butter and cups of sugar, I have finally found the perfect pumpkin spice muffin recipe without any butter or sugar… just don’t tell the college students

As fall approaches, I can’t help but be reminded of one of my favorite places to visit at this time of year. Oak Glen, a unique array of apple orchards and farms dispersed within a local area in which families and friends can pick their own apples, enjoy apple tastings and watch how apple cider is made. The most memorable times at Oak Glen is enjoying a hot apple crisp in the midst of a cool, brisk day. Our family never left Oak Glen without having a bit… or two ? Now that I live hundreds of miles away, a trip to Oak Glen just didn’t make it into the calendar for this fall.

Apple Crisp is always a great dessert to pull out of the recipe books around this time of year. As the leaves change colors and the weather becomes cooler, there is nothing like freshly baked hot apples covered is cinnamon sugar streusel. The one down fall to any apple crisp is the large amounts of sugar and butter than comes along with such a delightful dish. However, with a few tweeks and twists, I have created a perfect Low Calorie Apple Crisp recipe to bring a little fall into the kitchen.

Chocolate chip cookies are an all time favorite in my house. The chewy, moist, chocolate goodness of a hot chocolate chip cookie right out of the oven is hard to resist when attempting to eat healthy.

I can’t count the number of times where I told myself “Just one” won’t hurt my diet… and the next thing you know I’m reaching for 2, 3, or even 4 more cookies and pouring another cup of milk. Let’s face it, one chocolate chip cookie is just too hard to attempt when you have a dozen of them just scream at your name.

This is where I decided that making a whole batch of cookies might not be the best idea. If you can’t resist your temptation, that don’t even go there! But what’s life without chocolate chip cookies?

Life is much better now that I have a single serving recipe for chocolate chip cookies… and not only any chocolate chip cookie, but a skinny chocolate chip cookie. With less fat, calories, and sugar, this throws out all guilt from having dessert. The best part is that there aren’t any left over cookies for temptation!

1/4 tsp Unsweetened Applesauce

1/4 tsp Vanilla Extract

1 1/2 Chocolate Chips

Directions:

3.) Add in chocolate chips into cookie dough

Unlike most low calorie, healthy chocolate chip cookies, these cookies don’t come out dry, crispy or taste-less! Try them for yourself… just don’t be tempted to double the recipe!
