Fig Newtons bring me back to my younger years of opening up my lunch box to find a few hidden treasures underneath my carrots and celery sticks. Fortunately for me my mom was never around at school to tell me to eat my veggies before my Fig Newtons.
While I have never been fond of the squishy fig, I have always been a fan of the fig Newtons cookie, especially the fig filling. In fact, to this day I always eat my fig Newton from the inside out… never save the best for last!
The idea of creating a Skinny Fig Newtons Cookie Bar came to me one day when I was scraping the fig filling out of my cookie. Not only could I make Fig Newton Cookies but I could also whip up an extra batch of healthy fig filling to use on toast or peanut butter sandwiches! The Skinny Fig Newtons Cookie Bar recipe is so simple to make, so whether you are making the Skinny Fig Newton or the Skinny Fig Filling, you are in for a great and healthy treat that your kids will LOVE!
The Skinny Fig Newton Cookie Bar
Ingredients
The Cookie Dough:
3/4 Cup Whole Wheat Flour
3/4 Cups All-Purpose Flour
1/4 Cup Splenda
1/2 Cup Unsweetened Applesauce
1 Egg White
2 Tsp Vanilla
1/2 Tsp Baking Powder
1/4 tsp Salt
Fig Filling:
1 Cup Dried Figs
1/2 cup Unsweetened Applesauce
1 Tsp Vanilla
1/4 tsp Cinnamon
1/8 tsp All Spice
Directions:
1.) Pre-Heat over to 375 degrees
2.) Mix together cookie dough ingredients until smooth and place in the refrigerator for 30-45 minutes
3.) Using a food processor, combine all fig filling ingredients and mix until you have a jam like consistency and set aside
4.) Spray baking pan with non-stick cooking spray
5.) Line the baking pan with approximately 3/4 Cup of refrigerated cookie dough
6.) Bake for 20 minutes
7.) Spread fig filling on top of the cooked dough
8.) Spread the remaining cookie dough to top the fig filling
9.) Bake the Skinny Fig Newton for approximately 20-25 minutes or until golden brown.

I don’t know if I like fig newtons, I didn’t as a kid, but my tastes have changed since I’ve grown up, well kind of grown up! I’ll give this a try!!
