Whenever I think of Mexican Food I automatically think of Enchiladas. A prime dish at any Mexican restaurant, Enchiladas have become a gold star dish for their cheesy filled goodness. I mean, what more could you ask for when carb loaded tortillas meet cheese? Nothing but pure goodness!

The downfall with most Mexican food, especially Enchiladas are the mount of grease and calories that are pilled into small tortillas. One enchilada can easily add up to 500 calories and 20 grams of fat. And who doesn’t eat just one enchilada? Add the toppings of sour cream, guacamole, with rice and beans on the side… oh, and the chips and salsa! Eke, that’s well over 1,000 calories on one plate.
