Low Calorie Crustless Quiche Recipe
One of my all time favorite breakfast foods are egg dishes. There are so many different ways to cook them… Scrambled, Hard Boiled, Over Easy, in Omelets or Skillets, etc. You can never got wrong with egg dishes.
Quiche is by far my all-time favorite egg dish. However, calories and fats can sure add up between the pie shell, cheese, and butter. Not to mention that egg yokes are high in cholesterol with approximately 215mg per egg and high in saturated fats . . . all the more adding to calories and fats.
Instead of avoiding Quiche like the plague, I have created a healthy, low calorie Crustless Quiche recipe. Mixed with greek yogurt, this healthy crustless quiche is double in protein, minus the calories and fats. I call it the Crustless Mini-Greek Quiche Pie.
Healthy Crustless Mini-Greek Quiche Pie Recipe
Ingredients
- 0.25 cup Grounded Turkey Meat
- 1.5 cups Eggbeaters
- 10 oz Spinach
- 0.5 cup mushrooms
- 1 chopped onion
- 0.25 cup fat free shredded cheese
- 6 oz Fat Free Greek Yogurt
- Bread Crumb (optional)
- Salt and Pepper (optional)
Directions
- Preheat over to 350 degrees
- Generously coat muffin tin with non-stick cooking stray
- Cook ground turkey meat till fully brown
- Whisk eggbeaters and greek yogurt (salt and pepper) till smooth
- Dice all veggies and cook stove top with a few tablespoons of water
- Place diced veggies in muffin tins
- Sprinkle with fat-free shredded cheese
- Top off muffin tins to top with egg mixture
- Top with breadcrumbs to liking
- Place in oven for 35-45 minutes or till golden brown.
A perfectly round mini crustless greek quiche with only 40 calories! These little guys are perfect to heat up the next morning for an on-the-go breakfast when running late for work.
