I woke up this morning in a summer mood. I yearned for that summer mood where you long for a nice book to read poolside and the feeling of sunbeams roasting your skin. Unfortunately for me, winter is still here and the pool is nowhere near ready for company. However, the one place that always seems to fulfill my seasonal desires is the kitchen. Flavors have a sense of bringing me into summer whether summer is ready for me or not.
Lemons are the summer of my kitchen. No matter where I am or what the weather may bring, lemons can always bring summer into my home. Lemon Poppy Seed Muffins to be exact! And today the Skinny Lemon Poppy Seed Muffin seems to suffice my desire for summer. I hope this lemon poppy seed muffin recipe will suffice yours as well!
The Skinny Lemon Poppy Seed Muffin Recipe
Ingredients:
1 3/4 Cups All-Purpose Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/4 Teaspoon Baking Soda
1/2 Cup Splenda
1 Cup Lite Lemon Yogurt
2 Tablespoons Fresh Lemon Juice
1/2 Cup Unsweetened Applesauce
2 Large Egg Whites
2 Tablespoon (packed) Finely Grated Lemon Peel
1 Tbsp Poppy Seeds
Directions:
1.) Preheat oven to 350 degrees
2.) Mix together lite lemon yogurt, applesauce, lemon juice, and egg whites
3.) Slowly add to mixture flour, baking powder, salt, baking soda, and splenda
4.) Fold lemon peel and poppy seeds into mixture
5.) Spray muffin tin with non-stick cooking spray
6.) Place 1/4 cup of batter into each muffin mold
7.) Sprinkle additional splenda on top of muffin batter
8.) Bake for approximately 20-25 minutes (The tops will not brown so watch for the sides to brown)
