Nothing screams summer more than cool, crisp, ripened strawberries. The great thing about Strawberries is that they are low in calories and perfect for a side dish or snack.
Now that the summer is in full swing and the heat is blazing, it makes perfect timing to put these berries to great use.
One of my favorite ways to eat strawberries is in a large Strawberry Spinach Salad. While the name “Strawberry Spinach Salad” yells the word “healthy,” ironically most of these salad are not. Like most salads, the culprit to loading this salad up on calories and fats is the salad dressing. If you don’t watch it, you can easily be eating a 600 calories salad with over 40 grams of fat.

Low Calorie Strawberry Spinach Salad

Directions:
1.) Place all salad dressing ingredients into a magic bullet or blender and puree till smooth.
2.) In a large bowl mix spinach, strawberries, and almonds together
3.) Top salad with dressing prior to eating and Enjoy!

My very fussy 13 year old daughter eats spinach and strawberry salad and loves it. I’m just glad that she’s found something nutritional that she is willing to eat.
