Last night I got called off work for the first time… and of course it had to be on a day where I was to get paid time and a half.
Oh well, I got to spend the last part of Memorial Day with friends of ours while watching the new show on ABC called “Extreme Makeover: Weight Loss Edition.” With so much junk on TV these days, like Jersey Shore (ok, I watch it), it’s always great to see inspirational shows like this one. Although I have to say that this show will NEVER top the Biggest Loser.
This morning I woke up starving at 4am… on my day off! This whole night shift schedule is really screwing me up when they schedule me to work every other day! I stumbled into the kitchen to make a bowel of Pumpkin Spice Oats.
Did you know there is a difference between Puree Pumpkin Mix and Pumpkin Pie Mix? I need to pay better attention while grocery shopping. Definitely bought the Pumpkin Pie Mix over the Puree, but it was one less ingredient to add to my oats this morning.

Pumpkin Pie Oatmeal Recipe
- 1 cup water
- 3 tablespoons pumpkin pie mix
- 1.5 tablespoons sugar free maple syrup
- Dash of cinnamon
And off to the gym I went with Carrot N’ Cake… no, not Tina, her Book! Today was cardio day, which also means I get to catch up on my reading.
60 Minutes on the Elliptical. I’m resting up for Bootcamp tomorrow where the muscles will get worked!
And a Post-Workout Snack of Peanut Butter and Braided Pretzel Sticks. Oh Peanut Butter, How I love you!
After getting showered up I quickly jets to meet the newest member of the Reiger Family. Why are Newborns so stinkin cute… I want one!
Lunch was spent at new place in town called That’s a Wrap. I got the Rocky VII with chicken and lettuce, sautéed onions and bell peppers and a side of chips and salsa.
Although it was amazing, I saved the half for later and jetted over to Trader Joes for pizza dough. Tonight is pizza night with the Claytons. You will meet them later. For now It’s off to catch up on the Bachelorette!

You know what is awesome for the pumpkin pie oats? I love to whisk in some egg whites at the end of cooking. The oats get puffy and custardy and one of my favorite ways to eat them!
I add some protein powder to my oatmeal.. love me some PB. I eat the TJ’s no slat crunchy!!! Love their crunchy raw almond butter too!
I watched that show this week too, and was pretty impressed. I love inspirational stuff like that too. This season was my first time watching Biggest Loser (caught just 1 episode), but I think I may have to tune in more. We just got regular TV for the first time in 10 years and I’m on reality overload!
