I just wanted to say how much I love your blog site! My husband and I decided that it was time for a change in our eating habits. Neither of us are obese by any means, but we have a little extra “plump” to go around..so we decided to really start eating healthier and your blog is making it a very easy start! I am going to try the enchiladas tomorrow night for dinner! Cannot wait!

I guess I left that information out. It’s from a 15 oz can of pumpkin puree. Hope you enjoy them!
I made the healthy chicken enchiladas tonight and they were amazing.
I just wanted to say that I LOVE your recipes and I hope you keep posting more. The pumpkin muffins, in particular, are one of the most spectacular things I’ve EVER baked. Seriously–my whole family fell in love with them (me included)–they were delectable! I loved the tortilla pie, too. Keep the recipes coming, please!!
