Chocolate chip cookies are an all time favorite in my house. The chewy, moist, chocolate goodness of a hot chocolate chip cookie right out of the oven is hard to resist when attempting to eat healthy.
I can’t count the number of times where I told myself “Just one” won’t hurt my diet… and the next thing you know I’m reaching for 2, 3, or even 4 more cookies and pouring another cup of milk. Let’s face it, one chocolate chip cookie is just too hard to attempt when you have a dozen of them just scream at your name.
This is where I decided that making a whole batch of cookies might not be the best idea. If you can’t resist your temptation, that don’t even go there! But what’s life without chocolate chip cookies?
Life is much better now that I have a single serving recipe for chocolate chip cookies… and not only any chocolate chip cookie, but a skinny chocolate chip cookie. With less fat, calories, and sugar, this throws out all guilt from having dessert. The best part is that there aren’t any left over cookies for temptation!
The Single Serving Skinny Chocolate Chip Cookie
Ingredients:
1 1/2 tbsp All-Purpose Flour
1 1/2 tsp Splenda (or 1 1/2 tsp granulated sugar)
1 1/2 tsp Splenda brown sugar (or 1 1/2 tsp brown sugar)
Pinch of Salt
Pinch of Baking Soda
1/2 tsp Butter at room temperature
1/4 tsp Unsweetened Applesauce
1/4 tsp Egg White
1/4 tsp Vanilla Extract
1 1/2 Chocolate Chips
Directions:
1.) Pre-Heat oven to 375 degrees
2.) Mix together all ingredients except chocolate chips until dough texture
3.) Add in chocolate chips into cookie dough
4.) Form into a cookie ball, slightly flattening into the form of a cookie
5.) Place on cooking sheet and bake for 6-8 minutes and allow to cool

Unlike most low calorie, healthy chocolate chip cookies, these cookies don’t come out dry, crispy or taste-less! Try them for yourself… just don’t be tempted to double the recipe!

OK, love this!!!!!!!!!!!!!! I am not a choc chip fan but hubby is so I will try for him & will not waste a whole batch in case he says his usual: “they taste healthy”.

Ok, I definitely need to try this recipe! My biggest downfall when making cookies is having them all in the kitchen after I make them since I live alone. Making a single cookie (or two
) is perfect!
