Stuffed mushrooms can easily add up to 90 calories a piece with up to 8 grams of fats. But with the right recipe you can have a handful of stuffed mushrooms for the same amount of calories. Here is a perfect Stuffed Mushroom Recipe that is low calorie, low fat, and high in protein.
Healthy Stuffed Mushroom Recipe
Ingredients:
18 Whole Fresh Mushrooms
1/2 tbsp Olive Oil
1/4 cup Chopped Bell Peppers
1/4 cup Chopped Onions
3/4 cup Fat Free Greek Yogurt
1/4 cup Reduced Fat Grated Parmesan Cheese
1/2 tsp Garlic Powder
1/4 tsp Black Pepper
Pinch of Salt
Directions:
1.) Pre-heat over to 350 degrees and coat a baking sheet with cooking spray.
2.) Clean mushrooms with a damp paper towel. Carefully break mushroom stems off, grabbing as close to the root as possible
3.) Chop mushroom stems, onions, and bell peppers into fine pieces
4.) Heat oil in medium skillet and add mushroom stems, onions, and bell peppers. Cook till soft. Set aside to cool.
5.) Once cool, combine mushrooms, onions, and bell peppers with greek yogurt, grated parmesan cheese, garlic powder, black pepper and salt. Mix thoroughly
6.) Stuff mushrooms generously and place on sprayed pan. Sprinkle small amount of grated Parmesan cheese on top.
7.) Bake for 20 minutes and Enjoy!
