Stuffed Bell Peppers: Low-Fat, Low-Calorie
Did you know that as a bell pepper ages, it changes colors and tastes. For instance, A red bell pepper is a mature green bell pepper and the older it gets, the sweeter it becomes and it contains eleven times more beta carotene than a green one. Beta carotene from bell peppers reaps great health benefits such as eye problems, skin disorders, and enhance immunity.
I love bell peppers… chopped up in salads, sliced and dipped in ranch, or my all time favorite sauteed with onions. Not only do I enjoy bell peppers for their great taste, but also for the vast assortment of rainbow colors they come in. There are so many different colors to choose from: red, green, yellow, orange.
Here is a great low-fat, low-calorie, and low-carb bell pepper recipe to try when these colorful bell peppers are at their abundant best. Red, yellow, green, orange – no matter which you select, this recipe will bring out their true colors.

I love bell peppers, especially the red (which of course are the most expensive). I like eating them plan, with a dash of salt, or cooked in some EVOO, or slices on top of a sandwich! Your stuffed peppers look great. My grandma used to make a great stuffed pepper, but I’ve never made one. Thanks for the recipe!

I buy bell peppers in bulk, so I am always eating at least a half of one every day! I love them sauteed, in eggs, stuffed(HungryGirl recipe is my fav), and basically any way I can dream up!

I’m a vegetarian, so I’m going to try this and omit the meat/boca (whatever that is) crumbs, and add more vegetables – zucchini, broccoli.

Sounds great. I also do healthy stuffed peppers but have used part skim mozarella as the binder. Your recipe sounds “lighter” using egg beaters as the agent to mush it all together. Maybe this weekend it’ll show up on my table!

I used to not like bell peppers at all. But now I truly love them. I love stuffed bell peppers and make a very similar dish to yours. I also like bell peppers just by themselves as a snack or dipped in some hummus.

Red bell peppers are my favorite, I love their natural sweetness! Your peppers look delicious, and I love that they’re stuffed w/ veggies instead of rice (which my mom used to make)…your version looks much healthier

I’m usually not a big fan of bell peppers simply because i don’t know how to cook with them. My favorite dish is stuffed green bell peppers with Italian sausage. I’ve never actually made it myself. Your dish looks so festive. I love it. Thanks! Happy Friday! – Krystal

I love peppers. I like having them in a sandwich with other veggies, cream cheese, and hummus. They’re so versatile and can be thrown into just about any recipe.

I love stuffed peppers but I can’t make them. My sister makes them really well. My brother grows tons of peppers and the last time I was home we had stuffed peppers as a side in every meal. Hahaha.

Thanks for the recipe. These look wonderful. I can’t wait to try them. I love red peppers raw and in salads too. They are supposed to have more vitamin c than citrus fruits.
